Why does it take sky over a month for a broadband engineer to come and sort my broadband? Yet I can join virgin tv and broadband now and it will be fitted tomorrow?

Typically because ISPs like Sky (and BT/Plusnet/EE/TalkTalk) are obliged to place order with and then use Openreach personnel for broadband delivery and activation, while Virgin has its own workforce for its own private coaxial cable network (and does not carry data over Openreach infrastructure). That's the way the phone and internet in the UK has operated since British Telecom privatisation in the 1980s.
