Transfer number later.

Bought Sky phone as a Christmas gift & I need to activate the sim today. I know my daughter will want to keep her old EE number, can I transfer the number at a later date (Christmas) so I don't ruin the surprise. I understand I need the PAC but can that be done later ? Thanks
