I've been given a 2TB box from someone who doesn't want theirs. I've currently got a 1TB is there a way I can unpair my viewing card to pair with the new one?

You, and your friend can't do that. The box can only be used at the account address. If your friend doesn't need/want the box they need to cancel their subscription and return it to Sky so as not to be charged non return fees. Any potential ways of bypassing Skys T's and C's can't be discussed on here.
