Very common request this one. Unfortunately no way round it.
When turning the TV on I just tend to hit the power button on the remote and immediately follow that by pressing the back button. Then by the time the picture appears on the TV you are back at the last channel you was watching.

This is something sky should make an option.
My mum has dementia and she can't remember how to exit the initial screen to get to the "big picture". I find her watching the "little picture" in the corner of the screen. 😔

That's very unfortunate.
Trouble is that the likelihood of Sky ever introducing such a facility is virtually zero. Bit like the other common request for a reminder facilty that existed with the old Sky+ system.
I have heard that some people have purchased separate programable remotes that faciltate recording sequences of key presses but these do not tend to be cheap and I guess in your circumstance would just present further problems.
