I want to revert to the pre Sky Q system, but the engineer who came and installed Sky Q took away the part that went in the centre of the dish (which belonged to me).
The whole Sky Q set up is pants and I am looking at going down the freeview route. (No wonder Sky Q was free).

Unfortunately, as I think you may have gathered SKY won;t let you revert back to SKY HD - although they mey let you cancel without penalty.
I have not heard of anyway managing to get their Old LNB back but even if you did SKY are extremely unlikely to install it.
If you want to go down the Freesat route you may be better in the long run to get a Freesat 4K box which will work with the new Wideband LNB that SKY Q uses
(It is a shame that you did not see some notes I have made for people considering switching from SKY +/HD to SKY Q SKY +/HD to SKY Q befor taking SKY up on the offer to switch)
