eSIM - No Data, Sky Ireland

Hi all, looking for some help. 

I've been with Sky Mobile Ireland since launch on a physical sim. I wanted an eSIM so switched today and it's been a nightmare. 

eSIM activated fine but the data has not been working. It keeps showing 5g or 4g in the top right and then disappearing and only showing bars, then next second it's back. (iOS). Or it's showing 5G but no connection.  The data network is never properly activating. It's randomly worked for an hour. 

Calls and texts do work. 

 

I've been on the phone with support for hours doing everything from new eSIMs, to resetting all iOS settings (which removed years worth of preferences and bank cards), downloading profiles etc. Agent said their system wasn't responding so would call me back tomorrow. Then said they'd call me back in 10 minutes. No call back. 

I'm totally lost, especially since it worked for a random short period, multiple eSims and that other physical and eSIMs do work with the phone. Hopefully someone can help guide me.
