If that's an FTTP connection (ONT to Hub) then Cat5e is fine, and higher grades unnecessary.
Just avoid the ungraded stuff which doesn't carry a Cat rating: that's not actually copper wiring inside.
Note that for FTTC it's not an ethernet cable at all.
