I changed my mobile data plan and my bill is quite a bit more than I expected.

I upgraded my data plan and the offer was £8 for 8gb previously it was £6 for 2gb but my latest bill for this is going to be £11.64 and I don't understand why it is so much

If you changed mid month it will be pro rated, your bill breakdown will explain the charges.

Like you I'm a customer here, Sky Employees are clearly identified as such.

I did change mid month well a few days before the bill is generated but I dont understand the charges for this

You will be charged from the date you changed the package so it is based on the number of days before your next bill so if you did this before your next bill then for the majority of that bill you will have been charged for the previous data package then the few days at your new rate.
