My Wife has been told that Sky Q is limited to just the number of TVs that you have signed up for .. i.e 2 licences .. only 2 TVs.
This sounds like rubbish but I must be sure. Can someone help ?

Hi @Diggedy SKY Q is not limited by licences to a single TV but there are technical reasons that limit it's use.
SKY Q does not have an aerial connection to link to another a TV in another room
It connects via HDMI cables only so if you currently watch via the RF (Aerial) connection in another room this is can't be done like this.
The main solution to this is to use another box called a SKY Mini box which takes it feed via wifi or ethernet cable from the main box but this has an upfront admin fee and a monthly charge (which covers more than one min box)
The mini boxes also do not have any RF connections So typically it is one TV per Box

Not at all.
Sky Q multiroom is £15 a month on top of a subscription whether you have 2 or more TVs. You need a Sky Q mini for each TV which have a one off £50 setup charge. You can only have a maximum of 4 mini boxes connected and watch Sky on 2 mini boxes at a time, but thats just down to limitations of the hardware.

We have CAT 5 wiring and ethernet throughout the house.
would a single Sky Q be able to be viewed on any TV in the house (obviously only 1 at a time) or, without the extra box, is it stuck to just one TV ?

Afraid not @Diggedy
Without any mini boxes and Multiscreen subscription it is just one TV

To be clear, you can watch different programmes/recordings independently on three TVs at any one time. As well as the main box on the main TV, you need a mini box at each other TV. One multiroom subscription covers you for up to four mini boxes.

@Diggedy Do a bit more research before committing to Sky Q - it works very differently to Sky +HD and may not be right for you.

Its possible, but not as easy as it was back in the say with RF distribution systems.
You could for example connect the Sky Q box to a HDCP2.2 compliant 4 way HDMI splitter/Amplifier (It would need to be amplified to mitigate loss of signal strength). You could then use something like this
4K UHD HDMI 2.0 over Cat5e / Cat6 Extender - farnell sell them if you search this term
to distribute around the house via ethernet cable.
