A long press of the standby button on the Sky remote should switch your TV to standby, then it should automatically come out of standby when it detects the Stream puck being brought out of standby next time you turn it back on, as long as you have HDMI control turned on in the puck's settings.
If you still have trouble then it may be worth re-pairing the remote to the TV. Try using some of the Vestel remote codes instead of Hitachi as they manufacture Hitachi branded TVs.
