Hi @KKAVFC I would go to settings / accessibility / Subtitles and switch the toggle to off. This will turn them off completely for all Sky channels so will not come on when you turn your puck on. As mentioned by @mikealanr the Apps have their own subtitle options.
If you want to have subtitles for the occasional Sky programme then use the 3 white dots button on your remote and select the subtitles option (it will only appear if the programme you are watching is broadcast with subtitles).
When using the 3 white dots button option the subtitles will revert to off if you change channels.

Hi @KKAVFC
Press the three dots on the left of the remote > subtitles > toggle to off.
The power cycle your puck (settings > system management > resets and updates > reboot) hopefully should stop them coming on when you take it out of standby.
Note apps have their own subtitles and you need to switch off in each app. E.g netflix > iPlayer etc.
