See https://www.sky.com/help/articles/your-playlist-and-tv-guide-sky-glass for more info. Basically you can click watch from start or select the relevant program from the top of the TV Guide.

It's worth noting that restart isn't available for every program and there can be periods where the option disappears on ITV and BBC channels. A reboot may help when this happens.
