I don't have a complete answer to your question but this link has a lot of information about subtitles. I've looked at a few movies in the app (for example Flash and A man called Otto )
I don't see any subtitle information about subtitles for these on the app (as you have pointed out) but both of these titles have the S in their Skystore description on my Sky Q box.
