Have rented the wrong resolution movie on sky store and now we cannot watch it. (UHD) and not (HD). Our tv doesn't support (UHD). Can we get our money back or change to watch it on (HD)

You will not have been charged due to you not starting the film so this is an easy fix. Delete the UHD version and go to Recordings > Deleted and delete it again from here so it is completely removed from your box. Then you can go ahead and download and watch the HD version.
