You would lose access to the non-free-to-air HD channels, and bundled Netflix would drop to a lower tier.

You'd also lose access to any Recordings made from non-free-to-air HD channels.

When watching SD channels, content would be upscaled for viewing on an HD or UHD television. It's perhaps worth noting that SD to UHD is quite a stretch: maybe try a few now to see the effect.

You only need it if you are bothered about watching in HD vs SD .
Regarding Netflix - funny you should ask - as from today the Netflix proce structure via SKY changes if you make significant changes to your subscription.
At the moment because you have the SKY HD add on, you get Netflix Standard & can watch on 2 screens (which as @TimmyBGood points out you would drop a level without this HD add on)
After any major change to your subscription from today, you will need a separate Boost to Netflix Standard add on at £10pm to retain the Netflix Standard level (£15 for premium) -although I think the Netflix cost may driop slightly as the base going forward is the 'With Ads' version
