You should be able to ring Sky and ask to remove the Ultimate TV pack from your subscription. Billing should then automatically revert to whatever payment method you had set up on Netflix prior to you switching the billing to Sky.
If that fails or if you set up your Netflix account through Sky, then you'll need to login to your Netflix account on the website and setup a new payment method. It's quite straightforward. (Or it should be anyway!)
Just to be clear, your Netflix account won't disappear or be deleted if you cancel Sky. It'll still exist and you'll be able to log in to it, even without a payment method, but you just won't be able to watch anything until a payment method is set up.
