I cancelled sky but then decided to stay after receiving an offer, now I can't use Netflix even though I have ultimate tv add on, the app says update payment details and there is no option to
activate anything.

You need to reach out to Sky and you want an email they send that has a one time link which enables you to connect your Netflix account to them.
Took me about a week to get sorted.
