What is the maximum speed that a Q box can download data at ?
ie) Will it benefit from say a 500Mbps internet connection - compared to a 65Mbps connection ?
What is the max port speed ?

Older boxes are 10/100Mb, newer boxes have 1Gb ports.
But download speed are likely to be throttled at source so you are unlikely to realise significantly faster downloads.

I think the older boxes are 100Mb/s and the V3 boxes 1000Mb/s
That said you won't really benefit for anything over that needed for UHD Streaming (50Mb/s max ?) as downloads for SKY Q are limited to the speed the SKY Servers allow which I don't think is much faster (just above what is needed to continue watching whilst downloading) i.e. downloading from SKY servers is throttled and you can't just download at the fatest speed that your connection might allow,.
Edit : it seems I am slower at typing than @PandJ2020 who has said similar

The download speed of Sky on-demand content is only intended to be fast enough to permit viewing at the desired resolution without pauses for data buffering: it's not meant to slurp multiple episodes to disk as fast as possible.

My V2 box downloads at a maximum speed of around 120Mbps on a 500Mb Virgin Media connection connected via ethernet. If the main box is doing a lot, eg. you're watching TV on the main box, someone else is watching on a mini box, and programme(s) are being recorded, the speed drops to around 60-70Mbps.

The V2 boxes also have gigabit ethernet ports (not that it makes much difference to download speeds) it's just the first generation that are stuck with 100Mbps
