Sky does say that Wifi calling will most likely only work on device from them so was yours from Sky because if not as you are discovering this will be why it doesn't work:

One to watch out for: If you didn't get your phone from us, it might not be compatible with Sky Mobile WiFi calling. To check, set up WiFi calling and try making a call over WiFi. If the ‘WiFi call’ indicator doesn’t show, then your phone isn’t compatible.
