Payment change
I changed my bill date by around 4/5 days, i pay for 2x iphones, 1x watch however my next predicited bill they want me to pay for 3x iphones, 2x watches. Is this correct? If so how does it work, it just does not seem accurate to me.

Are you 100% sure you are reading this next bill correctly as changing the billing date will see the first bill after doing this be more due to the date change so it could be that against these devices it will say something like -21 days against it meaning it doesn'rt cover the full month.
Feel free to post an image of this bill on here if you want and should you do this make sure your account and credit agreement numbers along with your name are blanked out.

This is my May bill what confuses me it's charging me double for one iphone & watch but not the other.

It's not charging you double (as such). The change of payment date doesn't just change the payment date - a recalculation is performed.
This may result in 2 payments being taken for a given credit agreement. (You won't pay any more overall, but 2 instalments will be taken instead of 1 - reducing your outstanding credit accordingly)

May bill doubled
June bill back to the usual amount
How do they calculate that i have to pay twice for the same phone and watch?

As my previous post - Whilst your bill has 'doubled' it means they have taken two credit instalments instead of one. (You are not out of pocket)
As they are credit agreements (not just subscriptions) then the payment schedule will be adjusted to fit your original agreement.
