I'm abroad with my family, all four of us are Sky Mobile customers since the Ireland launch. We've just arrived in Helsinki today and none of us can connect to any network.

That apart have you tried searching for other networks to see if your device will connect and then work ?
Also if your phone is an IOS one try changing the automatic network selection to manual network selection as this will allow you to search for available networks and to connect to one that works for you. You should be able to search for all available networks on an Andriod device as well.
Also make sure this setting is set to Abroad:
Apple:
Settings > Mobile Service > SIM Applications > Make sure this is set to Abroad..
Android:
Sky Menu App or SIM toolkit > Roaming > Make sure this is set to Abroad.

We've tried all of this. Is there a specific way the access point settings need to be for network abroad? Or is there something that needs to be configured on our Sky accounts to allow roaming?

Yes, we've never had an issue roaming (with these phones) before switching to Sky
