I did try that several times but nothing came through.
However, my network connection has just been restored, so one of the many many things I have tried today seems to have worked! I wish I knew what it was, so I could share 🤣

Go to sky.com/networksettings (My Account > Mobile > Settings) and sign in with your Sky iD.
Select the mobile number or SIM name you're having trouble with.
Scroll to 'Resend network settings' and select Request settings.
Save the settings when your receive them and reboot your phone.
If not can you connect to a Wi-Fi connection to see if you still have that email from last time ?
