I have transferred my number but my new phone/sim is telling me my old iPhone sim is not compatible for esim but I contacted my old provider and they are saying it has successfully been done

It isn't an esim though, it's the sim sent from sky, physically

Yes that's correct.
I have done the PAC process from my old phone and sim (three) I have contacted three and they said it has transferred correctly.
when I go to setting on my sky phone and sim mobile data comes up with the esim message.

Apologies, sorted, simple SIM card removal and back in.
the mobile version of 'turn it off and back on'
