I just want to confirm that if I buy the iPhone 16 pro at £30 per month, I will still to pay my ee sim? Or will it be included in the £30 per month?

Your EE sim has nothing to do with anything you do via Sky, if you want to use that sim in the iphone 16 pro then you can as the phone itself it unlocked so you do not have to order a Sky sim if you don't want one.
