Can I roll over data to a new SIM and use in another SIM on a mobile device?

I've got a 30GB Sky mobile plan paid for by my work. Ive already piggy banked 80GB of data over my first three months. I'm contemplating buying a standalone Microsoft Surface Pro 9 5G and was wondering whether it's possible that if I bought another SIM whether I could put this in the Surface device and then add my filled over piggy bank data to the SIM and use it for data? I think I would have to buy a 100MB SIM (£5) as it's the cheapest option unless anyone knows how to get a free Sky SIM added to my account. Also would I be able to access this piggy banked data whilst roaming? I have EU and US roaming already as part of my original 30GB SIM plan.

Any additional SIM added to your account can use the piggybank,

There's no such thing as 'inclusive' of roaming - whilst you can use your data allowance there's a charge of £2 for each 24 hours.
