Can I get a copy of my call logs from my previous Sky Mobile Sim?

The corresponding bills will show any made calls (except freephone).
Otherwise, you can make a data access request for any personal data they hold: https://www.sky.com/help/forms/customer-information-request

And subject access requests can take up to 28 days to be actioned.
