We are considering buying a Sky Glass Gen 2 TV with an entertainment package but have Vodafone broadband - will this work ok considering it's a different provider?

As long as your Vodafone broadband is fast and stable then it should work fine with Sky Glass. 25Mbps absolute minimum, but preferably a lot higher.
You need to be prepared to troubleshoot your network in case the TV can't receive a good enough signal though. SkyOS which runs on Glass is a server-based platform so the TV needs a very stable fast connection constantly, in order to give a trouble-free service.
