Wifi connection jumping

I have sky wifi with a minimum guaranteed download speed of 100mbps. For the past month/2 when playing online video games my ping will erratically jump from anywhere between 10-30 all the way up to 200-600 10-15 times in a 6 minute game.

recently I had a sky certified engineer come out and ensure me my wifi was all good, so I do not understand why this issue pertains. The device I game on is a PS5 if that info is of any use.
