Changing to Ultrafast would have no benefit to your Sky Q mini boxes because these rely on local WiFi conditions between each Sky Q node. If you had problems with Sky Q before, they will remain when changing to Ultrafast.
As for the speed fluctuations, these are expected if you are having problems with Sky Q because Sky Q meshes together to boost the signal around your home. Therefore if the Sky Q nodes are freezing or disconnecting this will affect your WiFi performance at the same time.
I would recommend you get in touch with Sky and report your problem as a Sky Q issue. This will hopefully get a Q engineer to your home to fix the mesh between boxes and hopefully in turn solving your internet issues as well.
