How are you checking the speed?
Around 200Mbs over WiFi would be entirely reasonable for 500Mbs delivery over optical cable to the Hub (which is what the Guaranteed Minimum Download Speed applies to)

Thanks for the response I am using Internet speed test at Fast.com which the engineer recommended to use when he installed the fibre connection and when we checked a few times since that day and a few days after it was topping out at 400-450mbps so I'm confused why it's dropped by half that lately?

Is that from a wireless or a cabled device?

Because WiFi isnt the same minute by minute let alone day by day. Your speed will always vary over WiFi as there are many factors that can affect performance like number of devices, time of day, neighbours, distance from hub, other devices using the bandwidth etc. For an accurate reading of your broadband speed you must use an ethernet cable and this is the only metric Sky will accept
