I recently switched from Virgin Media (HFC with Hub 5) to Sky Gigafast with the Sky Max hub. There are times on the Sky connection where some websites will just not load for a few seconds and rare occasions where the connection will drop out altogether
I noticed this happens mostly on YouTube. The video takes a while to start, the screen will be black with the spinning circle but then it runs fine for a few minutes. However, periodically it will stop preloading, the grey bar, and the video will buffer when it gets to that point and then it'll start playing again a few seconds later. Google search and Twitter also suffers loading pages sometimes. Also when playing COD on PS5 there are rare occasions where it'll fail in matches.
I came across a post on another forum and people found that Openreach had an issue with reaching some specific Google servers
Their testing showed this

I don't know how to do these tests
My Virgin Media line is still active for a few days so I tested with that and had no problems. I've tested with devices like Galaxy S23 Ultra, iPhone 15 Pro Max, Galaxy Tab A7, M1 MacBook Air, PS5, Windows desktop PC. The PS5 and PC are connected with powerline adapters for ethernet connection, and these seem to not suffer with the slow downs/disconnects as often. The rest are connected to WiFi
I don't know if the Max Hub is having issues handling a lot of devices connected at the same time or if it's Openreach's network or if I have a fault in the fibre/ONT somewhere

@jamesn123 Max hub doesn't have the same interface. I can't see anything about router stats on that web portal
