That level of packet lose would be typical of a fibre to the cabinet connection and will unfortunately remain until full fibre arrives

Click on "more about your connection" for your guaranteed speed.
Your line is capable of 80 Mbps so unless you opted for a 40Mbps connection you may have a line fault

So it is a superfast 35Mbps connection and a guarantee of 36Mbps

My package is superfast 35, but i haven't opted for 40 on the line as far as I know.

Does having the superfast 35 explain the latency spikes and packet loss?

It is called superfast 35 to allow people with full fibre fttp to measure speed to a device using ethernet allowing 10% drop in speed as fttp does not carry the modem speed over to the sky hub.
Yours is superfast 35Mbps fttc so the true modem speed is carried over to the hub stats
Apart from the complete line drop at 12:00pm your packet lose is regarded as good
How is the gaming device connected via ethernet or wifi?

Ethernet
