Is it meant to be like this all the time?

Recently transferred full fibre connection across to Sky, from BT where speeds over LAN were always steady, constantly above 900Mbps, and quite often over 940.

Now, with Sky, using exactly the same setup and equipment speeds wildly vary between 500 & 800. Never seem to be anywhere near 900 and fluctuate constantly throughout the day.

It has now been 15 days and doesn't seem to be flattening out yet. Should I call Sky, will they even care? As long as we get the minimum download speed quoted of 600 (it was 700 with BT) surely they wont send a new hub for fluctuating speeds below the maximum?

By LAN speeds do you mean speeds on a device connected via an ethernet cable but running a test to an internet based speedtest, or do you mean your actual local LAN transfer speeds?
