For the past week or so the router's internet and voice have been turning amber, cutting off internet for a few minutes at a time. Here's the recent activity log and router stats:

Tried using the service checker but that claims there's no issues with the internet or the broadband, but the internet is going down every 30-45 minutes (if even that!). Tried restarting the router multiple times and that didn't help. Not sure what else I can do here.

Your router stats show a line issue so you'll need to report it to Sky. The best way to do this would be via phone so they can send an engineer out to you.
