If i switch ISP ?

I'm currently thinking of switching Fibre FTTP from Sky to Zen...I'm currently out of contract and I know Zen do all the switching etc...my question is..if I contact Zen to switch and they put that in motion what happens if Sky contact me with a better offer while switch is going thru do I then have to contact Zen and say I've changed my mind or will Sky let them know I will not be switching anymore ?
