Broadband connection keeps dropping out

Recently upgraded to ultrafast broadband, and since then have had very varied speeds even though the sky app says that the connection is fine and that I'm receiving the correct speed. I've tried to reset the hub and also the Openreach fibre box, but neither have made a difference. 

 

My Router stats are as follows:

You could try replacing the ethernet cable between the ONT and Sky router, and see whether that has an impact on reliability?
