My fibre optics broadband was supposed to be set up on 23/05/2023
And after 2 months of cancellations, and yesterday a missed appointment from an engineer, I have finally been told that openreach are struggling to get permissions, this is very frustrating, I've spent so much on data for my phone over the past 2 months and I've had zero communication, even being told today that several of my calls have not been recorded. I just want to know if I will actually get compensation after all this, since there's no real way to know if or when they will actually complete the installation. Also, if I change to a different broadband package (previous tenants had a regular sky package) or even if leave sky now, will I get compensation?
Thank you for any help with this, I'm stressed and can't seem to get a straight answer.

If you were given an activation date, then yes, compensation is due (and also for the missed appointment)

I'd think it's pretty inevitable that cancelling the order would complicate things, and leaving Sky even more so.
Note that compensation is due once the delayed service goes live, and is credited to the Sky account to use against future bills.

Our three-month delay was largely waiting for a response from the Local Authority and power company because a very short new in-pavement duct went past a lamp post.
