A quick glance in the forum you would see there a number of threads regarding back orders, simply put Sky are waiting for stock from apple.  The forum won't be able to tell you when Sky or you will receive your phones.  You will need to keep an eye on your order tracking page

Back order means there is no stock currently available that can be allocated to your order, you are just one of many in the situation across all networks with devices from Apple. This is due to stock shortages as Apple can't keep up with the demand plus covid, hgv driver shortages and delays to freight at the ports around the country so at present keeping an eye on your order tracking page is all that you can do as it will update when stock does become available:

I doubt any retailer will be able to deliver any before December.  (As above, such is the demand and shortage)
