Why do sky take unauthorised payments?

I've recently cancelled my sky subscription by deleting my direct debit as I've become very frustrated with sky taking payments without my consent or knowledge... anyone had this too??

That doesn't cancel your subscription. Your services will be restricted unless you reinstate a payment method, you won't be able to speak with Sky, you won't be able to cancel by official methods and you'll incur late payment fees. What you've done is the worst course of action you could have taken.

How and when did you give contact Sky to give them the required notice to leave ?

Your direct debit gives Sky consent.

Payments that are due are billed 14 days before payment is taken. It’s up to you to look.

No your incorrect there... it states in my terms & conditions that I must be notified in advance... sky have not notified me once.... therefore they're breaching the contract

 @SHAUN77  sky post bills to your online account 14 days before payment due date that is them giving you the legal required notice  (there is no obligation to provide it in a specific way/format)

 

It's then up to you to view the bill through the account

No, you've done that by cancelling your direct debit. When you find your services are restricted Sky won't speak to you and costs will simply mount up

 

You have already agreed to the payments to be taken monthly when you agreed your contract with them.

Like you I'm a customer here, Sky Employees are clearly identified as such.

Consider it this way: multi-billion dollar companies do tend to have entire departments of lawyers to advise them on such things, which suggests either they are complying with the contract or they are confident they can defend any alleged 'breach'.
