You'd have to call Sky to see what they can offer.
AIUI Sky no longer offer single channels (only all sports channels) and if they let you subscribe on a rolling basis you'd have to cancel on the same day you subscribe as you have to give 31 days notice.
NowTV may be a better option as you can subscribe on a monthly basis. (Streaming service that requires supported hardware to host the app)
