Yes, you have to pay BT.
Sky will not (and cannot) pay BT directly.
Once paid, you can submit a claim for credit: https://www.sky.com/help/articles/switching-credit-offer

You have to initially pay your old provider. You perhaps need to have a read of Skys advice on one tough switching in this link https://www.sky.com/help/articles/switching-broadband-provider

They might not have told that correctly as you pay the bill to BT and provide Sky with proof that you have been charged an early termination fee and that you have paid it then they will credit your SDky account with up to £200 for switching broadband and £100 for TV.
