If you want to use the same email address then you need to first remove it from the old account first so log into the old account here:
https://www.sky.com/myaccount/my-details
Then delete the email address by providing another one and logout of this account, this will then free it up to use when setting up your new Sky ID:

I'm wondering how long it should take to disassociate an email address & is it possible to do this if the old address is a Sky email address ?
I had Sky broadband until 18 months ago & a Sky ID was setup using my Sky email address.
I'm now moving home & I've got a Sky fibre service set to go live in a few weeks - I gave my Sky email for the account setup, but I did tell the chap that it was already tied to an existing Sky ID.
I wanted to track my fibre order, but even though I've now changed the email address on the old Sky ID to an Outlook address, I can still log in with the Sky email address & I therefore can't create a new Sky ID using that address.
FYI - The old Sky ID shows no active services, no orders & no billing since Nov 2022.
I only changed the email address a few hours ago - Do I need to wait 24hrs, or longer, or is it not going to work ?

I would give it at least 24 hours.
You don't have to use an email address as the login anyway as you can use anything as the username.
