Or did the channels thenselves, like ITVX and Rewind choose not to be present in the ROI?

ITV-X, Rewind the music channels you refer to are nothing to do with Sky.

Sky is a platform which channel owners choose whether or not to be present on. Given the Republic is the one of the smallest countries in Europe by population count it is extremely financially challenging for any commercial channel to operate there, particularly when paying the satellite owners (not Sky) for carriage, because they can only offer advertisers very limited audience figures.

Republic of Ireland
All Sky devices be it Sky/SkyHD/Sky+/Sky Q/Sky Glass/Stream and Sky Go
ITV and Channel 5 are not allowed to be listed on Sky EPG in Republic of Ireland as broadcast rights are with Virgin Media Ireland
Virgin Media Ireland channels has the broadcast rights to ITV Content in Republic of Ireland
This is why ITV channels are not listed on Sky EPG in Republic of Ireland and also why itvx is not available.
Virgin Media 3 used to be known as be3 and before this was known as UTV Ireland
July 2016, ITV plc announced that it had sold UTV Ireland to TV3 Group , a division of Virgin Media
Ireland ,
Virgin Media One Ireland broadcasts ITV content examples Emmerdale /Coronation Street/Britain's got Talent/I'm a Celebrity...Get Me Out Of Here etc
You will see in list below lots shows that are from ITV and Channel 5

Virgin Media Channels in Republic of Ireland
Virgin Media One
Virgin Media Two
Virgin Media Three
Virgin Media Four
The above Virgin Media channels are on Sky Ireland EPG

Sky didn't get rid of any channels, Brexit did. Many channels were removed from the Irish EPG when the UK fully left the EU on 31st December 2020.
This is because when the UK was in the EU it was really easy to broadcast in Ireland too, no additional licence was required to broadcast in Ireland (or any other EU country), but now extra licences are needed making it more expensive and complicated especially for smaller channels.

Has nothing to do with Brexit
ITV and 5 channels have not been on Sky Ireland EPG since 2006
Virgin Media Ireland has the broadcast rights for ITV content for a good view years as long before Brexit happened.
The same applies to Channel 5 content
A Sky Satellite Box you can tune into ITV Channels and Channel 5 by adding to other channels but won't be listed on Sky Ireland EPG it's also been that way since 2006
Note
Sky Glass/Sky Stream is not a Satellite service so will only have channels listed on Sky Ireland EPG
As it not a satellite service you won't have option to add channels manually
Virgin Media Ireland Channels 1/2/3/4 are on Sky Ireland EPG those channels broadcast ITV content in Republic of Ireland
RTÉ Channels also broadcast some BBC/Channel 5 content at various times
BBC 1/2/3/4 and Channel 4 channels are also on Sky Ireland EPG
Premier Sports is available on Sky Ireland Satellite EPG and Sky Ireland Glass/Stream EPG in Republic of Ireland has the broadcast rights for FA Cup for a good view years which is why they used the ITV broadcast today.

Certainly, but I suspect that's where the impression comes from.

Would be nice to see Rewind Tv launch on Sky stream/glass. It's launched on channel 190 on Sky Q. Some very good classic tv. Hopefully Rewind Tv and Sky can come to an agreement soon.

I have SkyQ and can't access Rewind TV new channel, just says there is a technical fault and has been since launch. No issue with any other channel, even turned the box off and did a reboot but nothing !
Anyone else having issues?
