if we switch from bt broadband to SKY what happend to our BT landline and phone number?

If you switch, you'll have Internet calls, so your phone will need to be plugged into your broadband Hub, not the wall socket.

Slight amendment to what @Mark39 posted: if your address is within reach of the national optical network then Sky Broadband will be provisioned over a new FTTP circuit, and the copper line becomes obsolete.
If it's in the UK, putting the address into the BT Wholesale Availability Checker should indicate which broadband provisioning type is applicable.
