So you will need to phone Sky to find out why the engineer visit was cancelled. Its quite possible that Openreach cancelled an engineer visit as they don't believe it is necessary and that all is required is to plug in the router once its arrived. The router will normally arrive a couple of days before your broadband activation date.
You can call on 150 from a Sky Talk Line or Sky Mobile.
If you haven't got a current Sky Mobile or Sky Talk this link should help:

Were you previously on Virgin broadband, or another altnet provider? If not then you shouldn't really be without a broadbadn service, as if your one and new providers were using the openreach network, ordering Sky would have triggered the cancellation of your old one, but it wouldn't cancel until the switchover is completed. The switchover is usually 14 days.

Putting the address into the BT Wholesale Availability Checker should indicate which broadband provisioning type is applicable.

@Daniel581 When you explicitly cancelled your previous BB service you locked your line... Which prevents Openreach from completing a seedless transfer🤔
That needs to clear before the Sky request to connect can be complete?

With regard your iPhone hotspot did any error messages appear on your Puck when you entered your SSID and password?
