I understand that matches broadcast live can be accessed within a few days of the event - that is, like a catchup facility. Is this true and, if so, how do I do it?

It depends on the match. Those broadcast on Sky Sports or TNT channels can be playlisted and there is a catchup. For example for football on the home screen select sports > scroll down to football > scroll down to catch up.
Or you can say a team on voice search. E.g Liverpool and scroll down to catch up.
If the game was broadcast on the Sky Sports + app - they aren't available for replay.

As @mikealanr says there are several options. Personally for me so long as I know when the game is going to be on I add it to my 'Playlist' it then effectively 'records' it so I can watch it when I want. Even if I watch it 'live' I still add it to the 'Playlist' just in case I have to stop watching it part way through for an extended time, 10mins +

The problem is I can't see anything about playlists. I clicked on a game to be played 23 january but all it says is this programme is not ready to stream. Instructions on the Internet say to use the + button on my remote to add a programme to my watchlist but my remote doesn't have a + button.

Do you have a Puck or Glass TV?

I have an LG tv. I've never heard of Puick/Glass.
From other research, it seems I need a Sky TV remote to be able to do playlists etc. I was never told this when I subscribed.

Are you accessing Sky Sports using NOWTV?
Playlisting is only available on Sky Stream Pucks or Glass TVs😉
