Sky Stream pucks will function with any broadband provider, you don't need to use Sky Broadband.
Feel free to set up the puck with your current EE broadband then, when your Sky broadband is activated, you'll just need to reset the network settings and connect it to the new WiFi or use an ethernet cable to the new Sky broadband hub.
