Surplus wires
I no longer have a sky dish but get Sky via WiFi however there are cables and wires around my home I would like to get rid off.
How or who can do this for me ?

It's not something Sky do. The dish and cables became your property on installation.

Any local handyperson, but keep in mind that making good and redecorating after removal is typically rather more time-consuming and consequently expensive than the initial cable removal (which is a good reason why Sky doesn't do it)
As @Daniel0210 indicates, Sky satellite television contracts transfer dish and cable ownership to the householder on installation specifically so that Sky isn't now responsible for tens of millions of instances.
