Dies anyone know if I can use a network switch and cat5 cable to send my sky picture to the rest of the tvs in the house? Also if so can they be used with some sort of sky eye to change channel? Thanks

It's possible but you'd need a lot of money and a lot more than a simple network switch and cat5 cable.
You're much better off getting miniboxes and multiscreen on Q, or multiple Sky Stream pucks with Whole Home, or the NOW app with Ultra Boost to get Sky programmes on multiple TVs in a single household.

Not directly: the output from a Sky box to a television is digital video and audio over HDMI cable, not data packets which can be sent over ethernet. In addition, television sets cannot accept an audio-video feed over their own ethernet ports.
There are 'video over ethernet' solutions, but these involve capturing the HDMI feed at source using external hardware and then converting it again back to HDMI at each television set: look up 'HDbaseT'.
