My tv is still old school, only HD, I do not subscribe to any sky HD channels.
As an example, BBC One is in HD as is ITV etc.
When I press 'R' as you always have, it will record that channel/program, but before you put it to full screen, at the top of the screen is all the blurb about the program, but there are two boxes HD, S (standard def)
No matter what HD channel it's on (free to air via the box) it always chooses the Standard, HD is always greyed out.
Is there a way to set it to HD? as in is there some way to toggle it, the same as you had a choice to select on a catchup download...if available in HD, obviously.
If it somehow makes any difference with this new box, I can't see how it would, my box is connected to my tv via HDMI 1.

I think you are being confused by the Symbols & possibly by the difference between recording from channels and downloading
The S next the HD is for Subtitles
When you record via the TV Guide on SKY Q the quality is set by which channel you set it - i.e. if it is an HD channel it will record in HD, if it is an SD channel it will record in SD (or UHD for the couple of UHD channels)
Downloads are different and in general are governed by the default download quality which is set to HD (high Definition) by default - if you don't have the HD add on probably best to set to SD
Main Menu -> Settings -> Setup -> Preferences
(Please note this setting can only be set on the Main box)

Sorry about that, I should have realised, after all these years.
The joy of joys just happened, it said there was a problem with my picture (I think it was) as the screen went blank (blue), checked the signal, both on 90, They gave me a new dish as well today.
Anyway, I went to turn the box off, and it started making a very shrill bleeping noise from inside.
Tried the power button, nothing, I thought OK, I'll pull the mains lead from the back, nothing, plugged it back in, still going, unplugged it from the wall, waited a few minutes and then plugged it back in and the box obviously rebooted and it's fine at the moment.
I'll leave the tv on for a good while, and see if it goes again.
I'll have to ring them otherwise.
